They both feature the same silky noodles and slurpable gravy, but wat tan hor is on the saltier side and usually has eggs in the gravy.Īlthough Rad na is often made with meat, like pork, chicken, or seafood, today, we’ll enjoy this delicious meal using tofu as the main protein. When I first tried this noodle dish, it reminded me of wat tan hor (Cantonese-style flat rice noodles) from Malaysia. However, it has a typical spicy accompaniment such as pickled Thai chilis. Unlike other Thai noodle dishes, such as pad kee mao, rad na itself is not spicy. It’s typically made from flat rice noodles and served with a thick, slightly sweet gravy made from fermented bean paste (Taucu or 黄豆酱 Huáng dòu jiàng). Rad na is a popular noodle dish that you can order at many Thai restaurants. It features silky homemade flat rice noodles that were pan-fried for maximum wok aroma and then drenched in a mouthwatering umami savoriness gravy. Lastly, don’t forget that you too can add vinegar, red pepper and/or sugar to enhance your noodles.This vegan Rad Na is one of my favorite Thai noodle dishes. Fried tofu or steamed tofu can be added in the noodle dish, instead of meat, for added protein. A meat-free oyster sauce is available for vegetarians and vegans. Vegetable stock also provides delicious flavors to your noodles. For veggie lovers, you can cook this meal without the meat and add more vegetables, as you like. If you like eggs, you can add one or more to satisfy your taste preferences. The pork and chicken stock can be substituted for virtually any other type of meat, seafood or poultry. There are many possible variations in the Rad Na recipe. Pour the mixture over the noodles and serve hot.Add the chicken stock and the mixed cornstarch and stir until the sauce is thick. ![]() Add the remaining oil to the skillet, put in the garlic and stir fry until golden, then stir fry the pork and broccoli with until the pork is well done.Add the sugar, soy sauce, black soy sauce, yellow bean sauce and oyster sauce to a small bowl and mix well together.Put 1 tablespoon of oil in a deep skillet and sauté the seasoned noodles approximately 1 minute. As a bonus, you will get all 5 of the major food groups and complete nutrition from this meal. The authentic recipe utilizes Chinese broccoli, but normal broccoli or broccoli rabe can be substituted just as successfully. The dish is not oily, but it’s pretty soupy. The noodles are combined with vegetables and meat in a thick sauce. In general, Thai people add condiments to a meal like this, including vinegar, fish sauce, sugar and red pepper, to make the gravy noodles more savory.
